Vinification: As is typical for all of this domaine’s cava’s, the Brut Reserva is a single-vintage sparkling wine. Hand-harvested Xarel.lo, Parellada and Macabeo grapes, separate-parcel vinification in tank. Second fermentation in bottle after which the wine ages for more than 24 months on its lies. Degorged right before shipment.
Character: Delicious cava, nose full of apple, fresh herbs, yeast and that beautifully iodine earthy note that Xarel.lo provides. On the palate elegant and refreshing, with a balanced mousse and a famously salty finish. Great aperitif-style cava with plenty of fruity freshness. Brut-level sweetness makes it a versatile accompanyment to all types of pre-dinner snacks, from oysters to fritters to fatty cured meats.
