Vinification

50% Macabeu, 40% Malvasia de Sitges, 10% Xarel-lo from organically farmed vineyards at high altitude on calcareous, gravel and limestone soils. Hand-harvest, fermentation for 25 days in stainless steel, 5 months aging on the lees.

Tasting notes

Deliciously summery but structured white. Aromatic on the nose ranging from oysters, pineapple, mango, summer rainand minty flowers. On the palate all these elements are pulled together and its limestone salinity pushed to the forefront.
