Bonnardot Aligoté ‘Sur le Bois’ 2019


This Aligoté comes from two plots, which have a total of 0.17 hectares. The first plot comes from the Santenay hills, where roots reach deep into the soil. The second part lies on a clay-lime underlay the appellation “Sur le Bois” Maranges.

Technical specifications

Exposition: Southeast.

Altitude: 220 and 240 meters.

Vineyards: Vines 30 years to 50 years old; 0.17 ha

Vinification: Manual harvest and selection. Whole-bunch direct press, with a slow, temperature-controlled fermentation.

Aging: Fermentation on stainless steel, 12 months on barrique. 

Tasting note

On the nose, warm ripe aromatic, yellow fruit, such as peach and quince. But the taste is fresh and green, with hints of granny smith and citrus. The acids are piercing and pointy, but the full malolactic fermentation and the use of barrel ripening provide fullness and roundness.
