Vinification

Grapes sourced from lieu-dit ‘Brureaux’ in Chénas, on clayey decomposed granite soils. Hand-harvest, strict selection in the vineyard and transport in small crates. Whole-cluster cold-carbonic maceration, fermentation on indigenous yeasts without SO2. Pressurage with old wooden press. Elevage on fine lees in old oak vats without SO2, minimal sulfitage at bottling.

Character

Similar to Moulin-a-Vent, the tiny cru of Chénas presents the firm and gamey side of Beaujolais. Pacalet’s 2018 shows the ripeness of the vintage on the nose, brimming with juicy dark berries, violets and a good helping of peppery funk. The palate is deliciously restrained however, its sweet mid-palate fruit kept in check by refreshing acidity and crunchy tannins.

Serving

This is a wine that begs to be served generously alongside all kinds of fatty treats. From simple saucisson sec to a more elaborate coq au vin, it’s the perfect partner to classic bistrot cooking. Don’t rule out a Peking Duck though.
