Isabelle et Denis Pommier ‘Grains de Survie’ 2016


Vinification: Hand-harvested grapes, spontaneous fermentation in part tank and part barrel, sur lie aging for several months.

Character: Despite being made from Southern French grapes, this Chardonnay feels surprisingly Chablisien: lightweight and mineral with a delicately creamy core. In the 2016 that core has now developed a deliciously nutty, almost cheese edge, while retaining most of its freshness. Delicious with rich and buttery dishes that you don’t want to overpower with a more oaky Chardonnay: lemony roast chicken, simply prepared lobster or fish with a delicate butter or cream sauce.
