Vinification: Biodynamically farmed 50 year-old vine Chenin Blanc on sandstone/silex over limestone soils. Hand-harvest, direct-press of whole bunches, natural fermentation without additives in old barriques. With some sugar left the wine shocked by cold and bottled, to finish fermentation in bottle. Degorged in oktober a year after the harvest without dosage or added sulphites. Aged in the domain’s cellars until last April.

Beautifully aged pet-nat! Deliciously developed Chenin-aromas (honey, mushroom, baked apple, flowers) wrapped in yeasty notes of baked pastry. Palate starts off smooth and fresh, becomes very rich mid-way and finishes tight and chalky. Very delicate but present mousse.
