Lise et Bertrand Jousset ‘Trait d’Union’ Demi-Sec Montlouis-sur-Loire 2018
Character: Fresh and energetic Demi-Sec bursting with gastronomic potential. Pretty nose of white flowers, pear, lemon, honey and sea breeze. On the palate it is rich but precise, with 23g/L residual sugar balanced by plenty of acidity and salty minerality. Long and refreshingly salty finish. Pairs beautifully with foie gras and rich terrines, sweet/sour cuisine, scallops and aged goats cheeses.
Vinification: Biodynamically farmed 80 year-old Chenin Blanc on clay-silex over limestone soils. Hand-harvest, direct-press of whole bunches, natural fermentation without additives in old barriques, aging on old barrels plus a couple months in tank. Bottled after filtration and light sulphiting.
