Vinification

Refreshing Grolleau from the Loire. Silty clay on blue schist with rocky slate subsoil. Average vine age 6o years. The grapes are hand-harvested and then put into a tank followed by carbonic maceration, which gives the wine a soft and juicy mouthfeel. Maturation in concrete tanks until bottling in February.
