Vinification

Hand-harvested organically farmed Jacquere and Altesse grapes from southwest-facing vineyard ‘Les Chateaux’ in Chignin. Old vines (50 years), densely planted on silty limestone soils worked with horse-plow. Carefully sorted whole clusters, delicately pressed and fermented in the tank without additions. Natural malolactic fermentation, 4 months aging in the tank.

Tasting profile

Great expression of white Savoie, creamy and concentrated due to low yields in the vineyard and low intervention in the cellar. On the nose Alpine notes of grass and white flowers, ripe apple, almond, and a tiny iodine touch that will become more pronounced with age. On the palate, it is plump but refreshing, not overly acidic but with a chewy mineral crunch on the finish.

Due to vintage variation, more recent vintages might differ slightly in taste.
