Vinification
Biodynamically farmed 50-year-old Pinot Meunier from single parcel ‘La Brousse’ in Le Breuil, with south/south-east exposure on silty clay-limestone soils. Hand-harvest at optimum ripeness, light crushing of the grapes (90% destemmed), 20 hours maceration. Very slow pressing, vinification in enameled steel tanks, aging on the lees for 5 months. Bottling without filtration, second fermentation in the bottle with biodynamic yeasts. 60 months aging sur lattes before degorgement, no dosage.
