Julien Guillot runs a remarkable family Domaine in Southern Burgundy, whose core vineyard soils were delineated by the Cluny monks in 910 and have never been treated by chemicals of any kind. From often very old, biodynamically farmed vines he makes profound natural wines with considerable aging potential.
