Vinification
Uncertified organic viticulture, heat management, and stimulation of biodiversity through agroforestry. Different plots of old vines on silty, clayey or stoney soils over a limestone base. Mourvedre 55%, Grenache 20%, Cinsault 15%, Carignan 10%, manual harvest. Delicate pressing, cultured yeast fermentation of separate pressings, malolactic fermentation is blocked. Blending of pressings in January, aging in the tank for 3 months. Bottled fined, filtered and sulfated.
Domaine la Suffrène
Domaine la Suffrène is a family estate in La Cadière-d’Azur, Provence. The old coastal vineyards have been family-owned for over a hundred years, but it was Fortuné Pichon who expanded the domain to a serious operation. In fact, in doing so he became one of the pioneers of the now-famous ‘Bandol’ appellation. Pichon’s grandson, Cédric Gravier, took over the farm in 1996 and built the cellar as it exists today.
