The fruit for this single-varietal red wine is sourced from selected vineyards situated in a territory characterized by low rainfall, high solar exposure, and significant diurnal temperature fluctuations. The vines thrive on poor, well-drained soils, forcing the root systems to dig deep into the mineral layers. This specific microclimate allows for optimal, progressive phenolic ripening of the skins, yielding highly concentrated grapes while preserving a balanced natural acidity.
## Vinification & Oenology
Spearheaded by winemaker Joan Àngel Lliberia, the vinification process focuses strictly on retaining primary fruit purity and structural elegance without the influence of oak maturation:
1. Harvesting: Grapes are harvested by hand at peak technological maturity.
2. Maceration & Fermentation: Following careful destemming, the grapes undergo fermentation in temperature-controlled stainless steel vats. Prolonged skin contact (maceration) is applied to optimize the extraction of soft anthocyanins and stable tannins.
3. Stabilization: The wine is kept entirely unoaked to safeguard the vibrant primary fruit notes, resulting in a clean, expressive Vino Joven (young wine).
## Organoleptic Profile
* Appearance: Visual analysis reveals a clean, brilliant, and intense garnet-red color with youthful purple hues along the rim.
* Nose: Highly expressive and clean on the nose. The bouquet opens with primary aromas of ripe red fruits—notably wild strawberries, cherries, and plums—interwoven with distinct balsamic undertones, notes of anise, wild fennel, and subtle hints of Mediterranean scrubland (garrigue).
* Palate: The entry is smooth and voluminous. It displays a medium-to-full body with a remarkably round, fleshy texture on the mid-palate. The substantial alcohol structure is seamlessly integrated and supported by ripe, velvety tannins and balanced acidity. The finish is persistent, clean, and dominated by lingering fruit and fresh balsamic notes.

Thanks to its voluptuous texture and soft tannin profile, this wine offers excellent gastronomic versatility. It pairs exceptionally well with roasted or grilled meats (such as lamb or pork roast), rich stews, savory casseroles, grilled Mediterranean vegetables, and semi-cured cheeses.
