Cult sparkling Gamay by pet-nat masters Lise and Bertrand Jousset. Delicate yeasty funk on the nose followed by heaps of ripe strawberres and raspberries, pear, orange peel and honey. Vibrant bubbles and creamy texture on the palate, packed with tightly laced fruit. Finishing with comfy slight bitterness from minerals.
Organically farmed 40 years old Gamay, hand harvested at a befriended domain in the area. Direct press, natural settling, spontaneous fermentation without additives until 15g sugar remains. Then the wine is shocked with cold and bottled. Fermentation finishes in the bottle, which remains undegorged.
