Vinification
Organically farmed 40-year-old Gamay vines, grapes hand-harvested at a befriended domain in the area. Direct press, natural settling, spontaneous fermentation without additions until 15g sugar remains. Then the wine is shocked with cold and bottled. Fermentation finishes in the bottle, which remains undegorged.
Domaine Lise et Bertrand Jousset
The Jousset’s are a young couple making amazingly pure and highly sought-after wines from their domain in Montlouis-sur-Loire. A recent string of terrible harvests due to hail caused them to purchase or harvest grapes at befriended (and equally organic or biodynamic) vignerons elsewhere in France, which are vinified and bottled under the ‘Exilé’ label. In fact, these ‘Exilé’-cuvees have become so prolific that they are now probably more famous worldwide than their greatest domain-sourced work.
