A real beast of a Champagne packed with ripe red and blackberries, spice, pastry, and wet earth. Broad-shouldered on the palate, with a slightly tannic structure and delicate mousse. Champagne that will stand up to firm and meaty cooking with ease. The 2018 degorgement is singing right now, vibrant but with a small oxidative touch around the contours.

Description

Vinification

Biodynamically farmed 50-year-old Pinot Meunier from single parcel ‘La Brousse’ in Le Breuil, with south/south-east exposure on silty clay-limestone soils. Hand-harvest at optimum ripeness, light crushing of the grapes (90% destemmed), 20 hours maceration. Very slow pressing, vinification in enameled steel tanks, aging on the lees for 5 months. Bottling without filtration, second fermentation in the bottle with biodynamic yeasts. 60 months aging sur lattes before degorgement, no dosage.

Domaine Christophe Mignon

Christophe Mignon is a 5th generation winemaker who farms 6.5 hectares in Festigny (Vallée de la Marne), of which 90% is planted with Pinot Meunier. Aside from being one of the champions of pure Meunier Champagne, he is a fanatic elaborator of biodynamic principles in both the vineyard and the cellar. He works the soil manually, produces his own natural vineyard treatments with often self-invented machinery (no chemicals whatsoever in his vineyards), and observes the lunar calendar throughout his operations. Not afraid to experiment with insights gleaned from homeopathy, phytotherapy, and geobiology, Mignon is convinced the best wines are produced by a harmony of modern and ancient methods.
