Vinification

Grenache from very old vines on marly soils, biodynamically farmed and harvested by hand. Two-week maceration/infusion of whole bunches (no punching down or pumping over), natural fermentation without additives in concrete tanks. Aged for 8 months in old barrels, plus a final month in a steel tank. No sulfur until bottling, and just a touch.
