Vinification
Biodynamically farmed Pinot Meunier vines in different parcels, average 45 years old and situated with south/south-east exposure on silty clay-limestone soils. Hand-harvest at optimum ripeness, very slow pneumatic pressing, vinification of separate parcels in enameled steel tanks. Still, wines are aged on the lees for 5 months, also in separate parcels. Blending of still wines and bottling without filtration, second fermentation in the bottle with biodynamic yeasts. 48 months aging sur lattes before degorgement, no dosage.
