Vinification: Biodynamically farmed old-vine Chenin Blanc on slate, sandstone and rhyolite (volcanic) soils. Hand-harvest at slight over-maturity (but no botrytis), direct-press of whole bunches, natural fermentation without sulphites or other additives, 8 months aging in old oak barrels. Natural settling, bottled unfiltered and unsulphured.
