Vinification
Very old vines (82-year-old) with very low yields (15 hl/ha) on clay-silex over limestone soils. Organic farming, horse-plowed soils, harvest by hand. Natural fermentation without additives, no blocked malolactic. Bottled in spring, filtered but unfined, with a touch of added SO2 (only at bottling).
Clos Roussely
Clos Roussely is situated in Angé-sur-Cher and has holdings in the appellations of Touraine and Chenonceaux. The Domaine is now run by the youngest scion Vincent Roussely, whose chemical-free farming and cellar practices marry traditionalism with an urge to experiment. The winery itself is located in 250-year-old vaults carved deeply into the limestone escarpments, which allows for temperature-controlled vinifications without elaborate technology.
