Vinfication

Once picked the Mencia (Jaen) grapes spend 8 to 10 days on the skins and undergo spontaneous fermentation with wild native yeast in large 1250 litre Chestnut casks and undergoes spontaneous malolactic fermentation. The wine spends 12 months ageing in the Chestnut casks on the lees (without battonage) and 9 months in the bottle

The wine is unfiltered to preserve aromas of forest fruits with sweet medicinal notes, medium-bodied, beautifully structured and balanced with a long persistent finish
