The white grape secco from Sekthaus Raumland is made from pure grape juice from the Bacchus vine. Volker Raumland has to pay close attention to the quality of the grapes used. The grape juice is not pasteurized as usual, but only filtered and carbon dioxide extends the shelf life. But Volker Raumland wants to make a product that is as “natural” as possible. However, he only needs to use ripe and above all healthy grapes for this, because preservation is no longer necessary due to the rapid heating. This requires careful selection of the grapes and a high degree of cleanliness. Otherwise, the secco grape is in danger of falling over quickly.
This extra effort pays off especially in terms of taste. The natural primary aroma of the Bacchus grapes is preserved and the addition of carbonic acid makes it uplifting and fresh. Certainly, the secco grapes have a certain residual sweetness, as Volker Raumland depends on the ripeness of the grapes to get the flavour in the secco grapes.
