Vinification
Biodynamically farmed Chardonnay vines in different parcels, average 31 years old and situated with south/south-east exposure on silty clay-limestone soils. Hand-harvest at optimum ripeness, very slow pneumatic pressing, vinification of separate parcels in enameled steel tanks. Still, wines are aged on the lees for 12 months in oak foudre. Bottling without filtration, second fermentation in the bottle with biodynamic yeasts. 60 months aging sur lattes before degorgement, no dosage.
