Vinification
Biodynamically farmed Pinot Meunier vines in different parcels, average 45 years old and situated with south/south-east exposure on silty clay-limestone soils. Hand-harvest at optimum ripeness, very slow pneumatic pressing, vinification of separate parcels in enamelled steel tanks. Still-wines are aged on the lees for 5 months, still in separate parcels. Reserve wines are aged for 12 months on fine lees. Blending of still wines and bottling without filtration. Second fermentation in the bottle with biodynamic yeasts, 36 months aging sur lattes before degorgement, no added dosage.
The current batch of ‘Pur Meunier’ is a blend of 2017/2018, degorged 8/2/2020.
