From 1982 Domaine du Cros, a father and son enterprise started to make their domain wines mainly from the local grape variety Fer Servadou. Teh AOC Marcillac is in the heart of Aveyron, Sudouest France. The areal size of Domaine du Cris is still small, only 2 hectares for a couple of thousand bottles annually. An alternative name for the Fer Servadou is Mansois. It’s the only grape variety permitted in the Marcillac AOC.
The Lo Sang del Païs is fermented for 15 to 20 days in Inox Cuves. Harvested manually and a long time is taken for the extraction. Several punch-downs, pump-overs and rackings provide more extraction of the colour and tannins, giving the wine a deep purple colour. Still, this wine is at its best in its youthful fresh fruitiness. A bit wild and rustic and a lot of enjoyable terroir expression of the French countryside.
