Vinification
Lise and Bertrand’s single-vineyard masterpiece! From a small, gently sun-exposed of 80-100-year-old Chenin Blanc vines on chalky clay (Aubuis) over limestone soils. Biodynamically farmed at very low yields (20 hl/ha). Hand-harvest, direct-press of whole bunches, natural fermentation without additives in old barriques. Aged for 12 months in old oak barrels and another 12 months in tank. Bottled with light filtration, no fining, and a touch of added sulfites (20-30 mg/L)
