Vila Volaire is a small domain in Saint-Chinian Languedoc. They make wines in IGP Coteaux d’Enserune in between the Mediterranean and the Cevenne Natural Parc. Stéphane and his wife, oenologist Cécile started with a mere hectare in 2000. Now they manage 12 hectares. They work biodynamic in the fields and if they can also omit the use of sulphite and other artifcial aids. The best way to keep the wines clear and pure is to work as careful and clean as possible. As well as in the vineyards as in the cellars.
The main grape for the Yerles is the Carignan. A grape that is very sensitive to oxidation and doesn’t like a lot of wood. So Stéphane started to experiment with amphore clay jars. The clarity of their wines are being praised allover. One of the great aspects of the winery is the terroir. The soil of d’Enserune exists of Miocene limestone, with an age upto 25 million years. It provides a mineral, low ph. The wines of Vila Voltaire are fresh and clean – an honest style which makes it fully sympathetic glass.
